Whole grain toast with almond butter, honey, bananas and strawberries

For about 2 years straight, this was my breakfast every single morning – and for good reason.  It’s delicious, filling, and extremely healthy.  I love this breakfast because it’s chock-full of protein and whole grains — plus you get a serving or two of fruit on the side.

Look for French Meadow Bakery breads at Whole Foods Markets, Bristol Farms, Ralphs, and other markets (or search for a supplier near you at http://www.frenchmeadow.com/).  Their Women’s and Men’s breads are delicious, proteing-rich, and low-glycemic.  If you can’t find French Meadow products, purchase an all-natural, preservative-free multigrain or whole-wheat sliced bread from your local grocer.

If you are trying to cut calories, use only 1 slice of toast, 1 T. of almond butter, and 1/2 t. of honey.


1 Serving


1-2 slices of French Meadow Bakery Women’s Bread or Men’s Bread

1-2 T. organic almond butter (mixed to blend the oil; most people prefer roasted almond butter for the flavor)

1/2-1 t. organic wildflower honey

1 banana (sliced, if you prefer)

5 strawberries (optional; sliced, if you prefer)



Toast the bread to your preference.   While the bread is still warm, spread 1 T. almond butter on each slice.  Top with 1/2 t. honey, spread thinly over the almond butter.

If you prefer, you can top your toast with banana slices.  Otherwise, slice the banana and strawberries and toss in a bowl; eat on the side.  Alternately, you can eat the banana and strawberries whole.
