Cleanse recipe: Puree of Broccoli Soup

This is one of those recipes that you can make when you’ve reached day 6 or 7 of your cleanse, only have a handful of veggies left in your fridge, and don’t know what to make.  There are only 4 ingredients in this soup, which is incredibly basic but still weirdly yummy.  It will fill you up without you having to eat lots of other stuff.  I usually eat it as a side dish while cleansing, alongside some other roasted veggies.

Serves 2

 

Ingredients:

1/2 lb. broccoli, chopped

2 c. vegetable broth

Cayenne pepper, to taste (I usually add a pinch, taste, and then add more if I can’t feel the heat)

Sea salt, to taste

 

Instructions:

Put broccoli and broth in pot, and bring to boil.  Steam broccoli in vegetable broth until tender.  Remove broccoli from pot, but keep the broth.  Put the broccoli in a blender or food processor and blend until smooth, addding vegetable stock to reach desired consistency.  Return broccoli to pot.  Add cayenne pepper and sea salt to taste, and serve.
