Cleanse Recipe: Mushroom, Shallot, and Fig Vinegar Saute

This is a super-easy recipe that I created during my last cleanse.  It’s earthy and absolutely delicious if you enjoy mushrooms.  For even better flavor, splurge on a “gourmet” mushroom like shiitake or crimini.  When I’m looking to save money, I go for regular old button mushrooms. 

Ingredients:

1 package sliced organic button mushrooms (or 2 c. gourmet mushrooms like shiitake or crimini)

1 medium organic shallot, minced

1 1/2 tbsp. organic cold pressed olive oil

1 tsp. (or more, to taste) fig vinegar

 

Instructions:

Heat oil over medium-high heat in pan.  Add mushroom and shallots and saute until mushrooms begin to soften and release their juices, ~8 minutes.  Add fig vinegar, and season with salt and pepper.  Taste, and add more vinegar if you prefer.  Serve hot alongside a vegetarian entree!
