I just had to post because I just tried out the most delicious new recipe: a roasted vegetable ragout, modified from a recipe found on epicurious.com. This is a satisfying, rich-tasting ratatouille-like concoction that is filling and chock-full of fresh vegetables.
Try it over quinoa (black or red quinoa is best, but use regular quinoa if you can’t find or afford the black or red kind). Or, if you are doing a cleanse or trying to really increase your consumption of veggies, eat it over sauteed dark greens (spinach, Swiss chard, and kale are all great options).
